From Saturday 14th to Monday 16th March 2020, Michelin-starred J’AIME at U Sathorn, Bangkok, is excited to present a new Japanese food festival menu.
While constantly searching for local organic products and growing together with the Thai “terroir”, we keep sourcing some of our ingredients from abroad to guarantee an intriguing variety and maintain high quality. To this end, and in order to reduce the restaurant carbon footprint and its impact on the environment, we started looking east rather than west and we realized that this wasn’t only helping us to make a more conscious choice, but we also discovered remarkably higher quality and freshness.
Over the last year and a half, sourcing some of our ingredients from Japan became a logical consequence of our quest for the best produce at the shortest distance, whilst still supporting local farmers and producers as much as possible whilst observing and supporting the incredible evolution of Thai organic and sustainable production and logistics.
Although we are a French restaurant and perpetuate Lorain’s cuisine, most of the time Europe just seems too far and doesn’t offer reasonable quality nor choice with sufficient sustainability or value. The exact opposite, Japan is not just well known worldwide for the quality of their produce and the dedication of their artisans, but it just so happened to be right next door to where we are “cheffing” in Bangkok.
Even though French cuisine established and codified the basics of western cuisine, it is still evolving and open to adapt, interpret and create over new landscapes. Some of the most famous, multi-Michelin starred chefs across the world have looked and still look for exotic touches, new ingredients and spices, so why not just move and broaden your horizons and enjoy experimenting in a whole new region?
