This delectable new menu has been crafted by Alexander Horwat, the exciting young head chef at Big Fish & Bar, who has worked with leading Michelin-starred chefs at world-renowned hotels and restaurants in Europe, and even ran his own restaurant, Horwat, in his native Austria.
Chef Alex has used his expertise to devise an inventive five-course menu that blends some of the finest ingredients, including black Kurobuta pork and fresh barracuda, with local and seasonal fruit, herbs and vegetables. Many of his flavor combinations are truly groundbreaking, promising a gastronomic experience to remember, and each course will be perfectly matched with one of Wine DD’s top labels.
The Big Fish Degustation Menu kicks off with a stunning starter of prawn with passion fruit and cucumber, reflecting Chef Alexander’s daring culinary style. This is complemented by a crisp Whitehaven Marlborough Sauvignon Blanc (2018) from New Zealand. To follow, the fish course brings together barracuda, vanilla, cauliflower and almonds for a delightfully light and balanced dish. Accompanying this unique creation will be a fresh and fruity Lander Jenkins Californian Chardonnay (2016).

Next, guests can savor the incredible flavor of black Kurobuta pork, which is known as the “wagyu of pork” and served with radicchio, corn and plums. This exquisite dish is matched with a bold Stonefish Reserve Shiraz (2016) from Australia’s Barossa Valley.
The epicurean extravaganza then concludes with an “Exotic Garden” of coconut, mango and pineapple - the ultimate tropical treat, paired with a Garfish Moscato (2017) from Australia.
This mouth-watering menu is available from 5th to 31st October 2019 at Big Fish & Bar, which has become one of the most desirable dining destinations on Thailand’s gulf coast.
