The idea of Sushi Ichizu restaurant was established in 2015 by Mr. Wichares Bunjitpimol (then, aged 23) and Ms. Kochamon Tulatum (then, aged 22) with the fascination for Japanese culture. They envision to have their own Japanese restaurant in which both spent nearly two years in persuading Chef Riku Toda, who at that time held the position of Sous Chef of Sushi Sugita to become Sushi Ichizu’s business partners as Executive Chef. In 2017, Sushi Ichizu restaurant officially opened to public and Mr. Beer, a friend of the co-founders has also joined the team. In order to elevate Thailand’s sushi-eating culture and experience to become wide-spread, Sushi Ichizu curated exclusive events such as invitation of various Michelin-star Japanese Chefs to create a more-than-memorable experience.
Both partners hold the word "Ichizu", meaning "the path-of", as the name of Sushi Ichizu to remind you to be ready for customers’ the best Japanese sushi dining ever experience.

Executive Chef Riku Toda- a Japanese native with great appreciation for the arts of Japanese and sushi- has curated decades of amazing experience throughout his professional career. Chef Riku acted as a kitchen apprentice for legendary Chef Hachiro Mizutani, Japanese’s three Michelin-star. Chef Hachiro is so dedicated to his standard of cuisine that when he retired, he proceeded to close down his existing restaurant. Later on, Chef Riku Toda continued his chef journey to work with one of Japan’s most talented sushi Chef Takaaki Sugita. Chef Riku Toda dedicated himself to practicing and training excruciatingly that he was promoted to Sous Chef at Chef Sugita’s sushi restaurant Miyakozushi, also very reputable in Japan. Miyakozushi eventually changed its name to ‘Sushi Sugita’ and went on to achieve great national recognition on being ‘the best of the best’ when it was awarded Gold Award from Tabelog for three years consecutively and a one Michelin star in total. Sushi Sugita became so popular, earning its reputation as one of the hardest
restaurants to make a reservation.
