“Aroi” means “delicious” in Thai, and Chef Attapol “X” Tangthong, Executive Chef of Bangkok Marriott Hotel The Surawongse, came together with ten of Marriott Bonvoy’s leading culinary experts to elevate some of the kingdom’s most mouth-watering recipes. Having been inspired by the fresh ingredients at Don Wai Floating Market, these talented Thai chefs held three days of workshops to finalize the menu. The result is a collection of ten heartfelt dishes, each with a deeply personal twist, that will transport diners on multi-sensory journeys across the country – from north to south – with fresh, local herbs and spices that reflect the chefs’ own heritage and evoke the essence of their destination.
This gastronomic adventure starts in the misty mountains of the north, as Chef Tor of Latest Recipe, Le Méridien Chiang Rai Resort, showcases Khao Soi, the rich, multi-layered noodle curry which he enjoyed regularly while growing up in Mae Sot, Tak. This version captures the distinct heat of Bang Chang red chilies. Moving into the vast and verdant northeastern region also known as “Isaan,” Chef Pla, who was born in Sisaket and now delights diners at EKKALUCK, Madi Paidi Bangkok, Autograph Collection, has elevated the classic Som Tum Gai Yang (papaya salad with grilled chicken) with fresh bird’s eye chilies from Isaan, which are known for their intense heat and distinctive flavor, and Thai garlic to enhance the aroma. Chef Pui of Praya Kitchen, Bangkok Marriott Hotel The Surawongse, who is a graduate of the prestigious Royal Palace culinary college, will present one of her favorite recipes – the northeastern classic Larb Moo, a wonderfully fresh, fragrant and spicy minced pork salad.

Moving into the central region of Thailand, Chef Kai of Thara Thong, Royal Orchid Sheraton Riverside Hotel Bangkok, has sourced the finest rice noodles from Chanthaburi province, which are known for their soft yet chewy texture, to craft Pad Thai Sen Chan, the stir-fried street food favorite which he regularly prepares for his family, and Chef Ton from The House of Smooth Curry, The Athenee Hotel, a Luxury Collection Hotel, Bangkok, will treat diners to a sensational version of Tom Yum Goong, the famous spicy & sour shrimp soup which has been inscribed on the UNESCO Intangible Cultural Heritage list. He lovingly prepares the stock by simmering prawn heads with galangal, lemongrass, kaffir lime leaves, and shallots to create the signature flavor and aroma. Another central Thai classic, Gaeng Keow Wan (green curry), has been reimagined by Chef Joe of Paii, W Bangkok, using organic, locally sourced ingredients to ensure the best possible taste. This was the very first dish Chef Joe prepared when he went to study in Australia, so it holds a cherished place in his heart.
Heading south, Chef Ja of Takieng, Renaissance Phuket Resort & Spa, celebrates community and sustainability by sourcing local produce such as wild betel leaves, shrimp paste from Krabi and turmeric from Surat Thani to create Gaeng Kati Bai Cha Plu (crab curry noodles) – a true taste of Southern Thailand – and Chef Pen from Mama’s Kitchen, Phuket Marriott Resort and Spa, Nai Yang Beach, invites diners to savor the deep, rich and exotic Gaeng Massman, which has been infused with dried red chilies and kapi (traditional shrimp paste). She believes that this is one of the most challenging Thai dishes to prepare, and carefully pounds and roasts the homemade curry paste to release its distinctive flavors.

A staple of Thai daily life, this is a recipe that will stir the senses. Every meal can end on a sweet note with Khao Niew Ma-muang, Thailand’s national dessert of mango sticky rice, which has been crafted by Chef Chach of Chon Som, Courtyard by Marriott Bangkok Suvarnabhumi Airport , using premium khao niew kiew ngu sticky rice from Sakon Nakhon province and fresh nam dok mai mangoes. Chef Chach grew up eating mangoes fresh from the trees in his grandmother’s yard, so this is a deeply personal dessert
