ABar Rooftop is proud to unveil its new innovative and award-winning sustainable cocktail: “South Ripple” – a vibrant and eco-friendly creation that demonstrates Bangkok Marriott Marquis Queen’s Park’s commitment to highlighting local ingredients and reducing food waste.
This original cocktail was invented by ABar Rooftop’s talented bartender, Teerawee “Night” Piyajiaranai, as his entry in the 2024 Marriott International APEC Sustainable Bartender Championship. This was one of two winners in the Thailand, Vietnam, Cambodia & Myanmar region, and Khun Night will now move forward to the APEC regional grand final!

The South Ripple cocktail is a fresh twist on the classic Bloody Mary, featuring premium Altos Reposado tequila, orange liqueur, and freshly squeezed lime juice. It also blends fresh tomato juice with a special syrup, made using a “sous vide” method from repurposed Surat Thani oyster shells and leftover lime peel, balanced with the tropical sweetness of Samui coconut syrup, and finished with a fiery kick of Sriracha chili sauce. The cocktail is garnished with tomato leather and a delicate dill leaf, this cocktail is as sophisticated as it is flavorful.
Furthering the hotel’s dedication to reducing food waste and upcycling materials, the South Ripple is served in handcrafted ceramic cups made from powdered oyster shells, sourced from the hotel’s Goji Kitchen + Bar restaurant, in collaboration with the National Nanotechnology Center (NANOTEC).
