While Chef Ton-Thitid Tassanakajohn suggested the tips to create delicious menu that, “The heart of cooking delicious food is to start from choosing fine ingredients, then cook with care and creativity in each menu. I’m a person who love creating Thai menu in diversity to reach all people with the concept that leverages Thai menu to modern format with my experience and my familiarity with Thai tastes to combine them together for delicious flavour among Thais and foreigners even more.”
The delicious 5-course menu created by Chef, Ton-Thitid Tassanakajohn includes Seabass Royal Leaf Wrap Appetizer (Miang Kham Pla Kapong), Thai vegetable wrap menu combined with French cooking technique with the highlight of using longan fruit to enhance sweet flavour in perfect match with beverage made of Chardonnay grape like Gold Label Chardonnay in outstanding sweet and sour palates. Next is Chicken Coconut Soup (Tom Kha Gai), soft chicken meat served with wild mushroom in delicious soup from fresh coconut milk and chicken broth and added with aroma from fresh lime, suitable to pair with Gold Label Cabernet Sauvignon, Thai Northern Spicy Soup with Pork (Gang Om Moo) that features smoky grilled pork topped with Northern spicy curry sauce made of dill blended in concentrate pork broth to lessen its smell in order to pair with Grey Label Shiraz more easily. The special dish created in collaboration with Wolf Blass to promote the ‘FIND YOUR FLAVOUR’ campaign in Thailand is Beef in Red Curry Sauce (Choo Chee Nua). This menu is adapted in exotic style from the selection of beef in good parts for variety of falvours to pair with Shiraz grape more easily. In general, Thai foods have one outstanding taste, for examples, too spicy or too sour so it’s difficult to pair with drinks. Thus this menu is paired with Gold Label Shiraz to offer perfect combination of taste. Finish with dessert menu, Jackfruit Ice Cream served with Jackfruit Seed in Syrup and Tamarind Gel to complete this delicious course.
