Authentic Khao Chae made in the traditional manner and using organic rice supplied direct from local farmers in Amnat Charoen province is being served at The House of Smooth Curry for lunch and dinner from 15 March to 30 April 2022.
Introduced to Thailand during the reign of King Rama II, Khao Chae was originally considered a royal cuisine and was not available to the public. Today, it is a seasonal favorite dish during the hot months, the chilled rice contrasting perfectly with the array of savory condiments.
Using an ancient royal recipe, Chef Montri and his team of chefs soak the rice overnight in jasmine-scented cool water to release all the natural aroma and oils, and serve the dish with eight condiments, namely shrimp paste ball, stuffed shallot, stuffed sweet peppers, shredded sweetened beef or pork, pickled turnips with egg, sweetened sun-dried fried fish, fried minced pork with salted fish, and salted egg yolk with minced pork. Seasonal marine plum syrup is served as a dessert treat.
Khao Chae is available at The House of Smooth Curry, The Athenee Hotel, a Luxury Collection Hotel, Bangkok, at THB 850++ per set for dining in the restaurant, or can be collected as a takeaway set at THB 1,250+. The takeaway Khao Chae set is packed into an attractive and sustainable wicker basket that can be reused, with the condiments in their own miniature baskets and the rice in an earthenware bowl.
