To mark these momentous twin milestones, Phulay Bay has invited Chef Christian Herrgesell, the culinary innovator who spent 10 years at one of the world’s most acclaimed restaurants, to host fine-dining evenings on 22nd and 24th December 2021. These will be followed by a sparkling New Year’s Eve celebration under the stars on 31st December 2021. Chef Christian, a head chef and concept creator from Germany, has spent 20 years in the top echelons of global gastronomy. Ten of these were spent at Restaurant Tim Raue, Berlin, which has been ranked on “The World’s 50 Best” list every year since 2014, holds two Michelin stars, scored 19.5 out of 20 Gault & Millau points, and even featured in an episode of the Netflix “Chef’s Table” series. He is now planning to build on his stellar reputation by opening his own highly-anticipated restaurant in 2022. |

The festivities will commence on 22nd December 2021 with the “Phulay Bay 12th Anniversary Dinner” – a carefully crafted four-course Asian fusion menu that will showcase Chef Christian’s inimitable style. Impeccable plates include an original “Krabi Sunset Salad”, which has been created especially for the event, slow-cooked salmon with som tam, Thailand’s famous spicy papaya salad, roasted cornfed chicken with yuzu, and a vibrant calpico mousse with tropical hints of lemongrass, lychee and lime leaves.
Then on 24th December 2021, the “Christmas Eve Special Menu” will present a distinctive twist on the traditional festive feast, with four highly original courses served in a wonderfully seductive setting. Couples can come together and share a glittering evening, filled with the joy of the season. Diners with a passion for fine food will delight in the Asian-influenced menu that features “Dynamite Prawns”, ocean-fresh cod with fiery wasabi, succulent roasted Australian short rib of beef with fragrant five spice, and a Thai-inspired mango and coconut dessert.
The revelry continues on 31st December, as Phulay Bay rings in the New Year. Following “Golden Sunset Cocktails” at Chomtawan Bar, the night comes alive with a “Celestial Celebration” at Sala Srichan, the enchanting alfresco venue. Under a sky of twinkling stars and walls adorned with thousands of lights, this exquisite evening with showcase global gastronomy, including the timeless flavors of Thailand and the freshest Andaman seafood.
