Chef Ian Kittichai Unveils New À La Carte Menu Celebrating Thailand's Hidden Regional Treasures at Khum Hom Restaurant

Khum Hom introduces rare regional specialties from across the kingdom
​BANGKOK, 3 October 2025 – Khum Hom restaurant at Mövenpick BDMS Wellness Resort Bangkok presents its latest à la carte collection, featuring an exceptional selection of Thailand's most elusive regional dishes. Available from 4 October for lunch and dinner, this thoughtfully curated menu brings rarely encountered provincial specialties to Bangkok's diners.
 
Chef Ian Kittichai's latest creations showcase forgotten culinary gems from across the kingdom, including Yum Nung Mhoo Hoi Shell, this dish pairs crisp pork skin with premium scallops in a roasted coconut, lime, chili dressing and fresh herbs. The aromatic Gaeng Ra-waeng Short Rib, a semi-dry curry dating to King Rama V's reign: and the delicate Gaeng Chued Ngo Yad Sai Gai, featuring Surat Thani rambutans stuffed with seasoned chicken in a clear broth. Each dish represents Chef Ian's commitment to preserving Thailand's diverse culinary heritage through refined contemporary techniques.
Becoming very rare in nowadays Thai dining scene, these dishes are mostly in the regions they originaled from or during family gatherings. The menu celebrates ingredients sourced directly from their native provinces, from Songkhla's prized freshwater sea bass to Amphawa's rich coconut milk. Standout dishes include Saeng Wa Goong Mae-Nam Pla Fu, grilled Tapi-river prawns from Surat Thani and crispy freshwater seabass from Songkhla and Nua Khem Tom Kati, a velvety stew of sun-dried beef that exemplifies many generations of rural Thai culinary wisdom.
 
The new menu also features nostalgic desserts like Kanom See Tuai, a traditional wedding blessing sweet dish rarely seen outside ceremonial occasions, Khao Mao I-Tim Kluai Khai, a dessert rooted in Thai tradition, and the innovative Kanom Kho filled with organic Mahachanok mango ice cream sourced from Sukhothai's renowned organic farms.
