​Hua Hin, Thailand: April 30, 2025 – Big Fish & Bar, the stylish seafront dining destination at Hua Hin Marriott Resort & Spa, will be transformed into a chic Spanish beachside tapas bar this May, as it welcomes back acclaimed Spanish chef Juan Ignacio García Racionero (or “Chef Nacho” as he is better known) for Volume 2 of its “A Taste of Spain” culinary series.
 
On May 16th & 17th, 2025, Big Fish & Bar will host Chef Nacho, a Madrid-born culinary talent with over a decade of experience in some of Spain’s most esteemed kitchens, before taking the helm at the acclaimed LUZ Bangkok Tapas Bar, perched on the rooftop of INNSiDE by Meliá Bangkok Sukhumvit. This two-day takeover will invite hotel guests, local residents, and visiting diners to discover authentic Spanish cuisine, elevated to new heights and perfectly paired with premium labels from leading Spanish vineyards.

​Chef Nacho’s multi-course menu commences with traditional tapas, crafted using the finest ingredients. These sublime small plates include Jamón Iberico y Caviar (Iberian bellota ham, brioche, Oscietra caviar, and Iberian ham consommé), Croqueta Mar y Montaña (oxtail croquette with spicy tuna tartar and aioli), Tsarskaya Ostra con Ajo Blanco (Tsarskaya oyster with a cold Spanish soup of almonds and garlic), and Pulpo Romesco (grilled octopus, with pani puri, romesco sauce and escalivada salad).
 
Discerning diners can also savor Fideua de Gandia (Valencian-style short vermicelli “paella” with Thai river prawns and Hua Hin squid), and a choice of two mouth-watering main courses: Solomillo y Trufa (Australian Angus beef tenderloin with Spanish sauce, black truffle and parmentier potatoes) or Rodaballo al Pil Pil (turbot with pil pil sauce and lemon). This culinary journey then concludes with a delectable dessert of Espuma Crema de Catalana (light Catalan-style cream with strawberries, orange chutney and red fruit sorbet), all accompanied by lively flamenco music and dance.
 
The “Taste of Spain” Vol. 2 event will take place at Big Fish & Bar, Hua Hin Marriott Resort & Spa, on May 16th & 17th, 2025 (18.00 hrs. onwards), priced at THB 1,799++ per person (food only).
