The contemporary fine-dining restaurant, the first and only in Thailand of the legendary French chef Alain Ducasse, will offer a slightly adapted format which will include the option to enjoy an all-day dining experience. In addition, Executive Chef Wilfrid Hocquet has creatively prepared special Mother’s Day celebration course menu, exclusively created to mark the special day.
With its reopening menu guests are still able to sample the restaurant’s signature “Blue crab, tomato water gelée, gold caviar” which is set on an aromatic tomato gelée which is cooked for 12 hours with aromatics, spices and chilies, and is topped with lightly poached blue crab before a crown of exquisite gold caviar is placed to finish the dish. Executive Chef Wilfrid Hocquet has redesigned the menu to feature classic French dishes with a modern interpretation such as Lobster Thermidor which is poached then served with different textures of artichokes and finished with a lobster cognac jus. This dish can be followed by the “Frozen and roasted peach, lemon balm” a revisit to the Peach Melba which bridges the gap between classic and modern French cuisine.

Blue by Alain Ducasse will continue to offer guests a taste of contemporary French cuisine however now this will be offered throughout the day. Blue suggests it’s “All Day Menu” priced at 1,650 THB ++ for a three course menu from midday until six pm, which three options for each course. During the evening, guests are given the choice of the A La Carte options or two different tasting menus. The first being a five course menu priced at 3,250 THB++ and those with a larger appetite can select the seven course menu priced at 4,950 THB++.
On Wednesday 12th August Blue will offer a mother’s day menu specially designed for the occasion, two menu options are available with a delight filled six course menu priced at 4,850 THB ++ featuring items such as Crab with Caviar, Pan-seared Foie Gras, Wagyu Beef and Chocolate from the Alain Ducasse Manufacture in Paris. In addition to this if guests prefer a lighter option a three course menu featuring choices from dishes on the larger menu is available at 3,550 THB ++.
