(Bangkok, Thailand) – 25 April 2025 – On 1st May, Ojo – a sky-high Mexican restaurant on the 76th floor of The Standard, Bangkok Mahanakhon will host a six-hand culinary collaboration bringing together Ojo’s founder and Mexican culinary luminary Francisco ‘Paco’ Ruano, The Standard Bangkok’s executive sous chef Alonso Luna Zarate and chef patron of Bangkok’s Michelin Guide-listed ORE Restaurant Dimitrios Moudios.
The talented trio, who share a passion for seasonal ingredients, will present a multi-course set menu turning impeccably-sourced Thai and Mexican produce into honest, unpretentious dishes that celebrate simplicity and flavor.

Born and raised in Guadalajara, Mexico, Chef ‘Paco’ Ruano opened Ojo, his first restaurant outside his home country, to showcase authentic Mexican dishes rarely found elsewhere in Thailand. Under his visionary leadership, Ojo breaks away from stereotypes, instead focusing on a seasonal, produce-driven menu that blends tradition with modern technique. Alongside him is Chef Alonso Luna Zarate – an expert in Mexican and Southeast Asian cooking who is equally dedicated to reshaping perceptions of Mexican cuisine in Bangkok.
Chef Dimitrios Moudios, whose restaurant ORE was named by the Michelin Guide "restaurant opening of the year”, champions elemental cooking, transforming the simplest ingredients into refined masterpieces using only water and fire. Chef Moudios takes a purist approach, sourcing organic vegetables and meats from local farms and the fresh, unfiltered spring water from Sai Yok Yai Waterfall. Meanwhile, the charcoal used for cooking comes from yuzu and yangon wood, lending a distinctive depth to his dishes. At just 30 years old, Moudios has already made his mark in the culinary world, honing his craft in top European kitchens such as the three-Michelin-starred Atelier in Munich and Ernst in Berlin.
Behind the bar, Chanel Adams, the first female manager and head mixologist of The Bamboo Bar at Mandarin Oriental Bangkok, will take over for an exclusive guest shift, curating bespoke cocktails for the evening. With experience at renowned venues such as the two-Michelin-starred Barmini by José Andrés in Washington, D.C., and the acclaimed PDT at The Landmark Mandarin Oriental, Hong Kong, Adams brings a mastery of mixology that promises to elevate the night even further.
