Chef Shen Tan spends the majority of her celebrated career exploring Singaporean and Southeast Asian flavors, creating and reinterpreting regional dishes with fresh, interesting perspectives.
The 5-course Mod-Sin pop-up dinner includes sensational gourmet dishes such as Mee Siam Ceviche with Hokkaido scallop, grouper, pineapple and mee siam rempah; Michael Jackson Carrot Cake in black and white with prawns and scallops; aPORKalypse Nasi Lemak with five-spice pork confit; Orh-Nee You with deep-fried fine rice vermicelli, freshly-made taro dumpling and coconut ice cream; and Krusty Dessert, crab-and-mango cigars with lime lychee sorbet, salted egg yolk ice cream and grated salted egg yolk.
