Hua Hin, Thailand: June 19, 2025 – Big Fish & Bar, the premier beachfront restaurant at Hua Hin Marriott Resort & Spa, is thrilled to unveil a vibrant new menu under the leadership of its new Chef de Cuisine, Photchaman “Aom” Arnupapdecha. With a remarkable 15 years of experience in top kitchens across Australia and Thailand, Chef Aom is ready to share her culinary vision, emphasizing seasonality, sustainability, and global inspiration in every dish.
​Having honed her craft in prestigious venues, including 3-hat fine dining restaurants and an upscale hotel in central Sydney, Chef Aom returns to her native Thailand with a culinary philosophy that skillfully blends Mediterranean flavors with the rich diversity of Thai and broader Asian cooking styles. Her new menus at Big Fish & Bar highlight the essence of quality ingredients, from local seafood and organic produce to a curated selection of premium imports—all prepared with clarity and precision.
 
At the heart of her cuisine is the Josper Grill, a Spanish charcoal oven that seals in natural flavor and elevates even the simplest ingredients. Guests will discover a variety of techniques throughout the new menus, ranging from delicate raw and cured starters to expertly steamed, stir-fried, and grilled mains. Each dish is thoughtfully designed to showcase the ingredient first, with minimal interference.
​The menu features impressive highlights like sustainable certified Tsarskaya and Geay oysters from France, Hokkaido scallops, Tasmanian salmon from Australia, and monkfish fillet from Bretagne, all prepared with subtle nods to both Mediterranean and Thai traditions. Local seafood also features prominently, from succulent tiger prawns and Phuket lobster to daily catch selections, offered either grilled or cooked in authentic Thai styles.
 
Among these standout culinary creations, guests are strongly encouraged to savor Big Fish & Bar's signature dishes. These include the Tasmanian Salmon “Cured”, featuring ACS-certified salmon with pomelo, coconut cream, betel leaves, and a green chili dressing—a harmonious blend of Australian and Thai flavors. Another highlight is the Big Fish “Bouillabaisse”, a unique Thai-infused take on the classic French seafood stew, enriched with lemongrass and kaffir lime leaves. Don't miss the Charcoal Grilled Atlantic Monkfish, which showcases French monkfish wrapped in bacon and grilled for a deep, smoky flavor, or the 12-Hour Braised Wagyu Beef Cheek, a rich, tender Australian Wagyu prepared in the style of a classic Burgundy stew, served with silky mashed potato and a luxurious red wine sauce. To complement these exquisite dishes, the restaurant also boasts an extensive wine list, offering a great selection of wines thoughtfully chosen to pair perfectly with each culinary creation.
