New Dishes Take the Stage at Signature Bangkok

Chef Thierry Introduces a New Starter, Main and Dessert to the Menu 

The velvet curtain goes up for three absolutely new mouthwatering creations. Every dish at the Signature Bangkok has been personally created with the celebrated talent and passion of former 2 Michelin Star Chef Thierry Drapeau.

Now these three dishes, if enjoyed together, will take diners from a sumptuous beginning to a very satisfying end.

La Carotte
Chef Thierry new Starter is a variation around French carrots, in which the vegetable is found as a puree, a jelly, a sorbet, as a crisp, as a pickle and as a dry powder. The whole dish is seasoned with tarragon and coconut and paired with freshly made feuillete bread (brioche) bread also made of carrots and tarragon.

​Lamb from the Pyrenees
From the French Pyrenees (the mountainous natural border between France and Spain), this lamb is unique and available only from the 15th of October to the 15th of June each year. Fed exclusively and directly with its mother’s milk and less than a year old, the lamb is not given any medication, steroid or treatment, the lamb bears the distinguished red label of ‘Milk-fed lamb of the Pyrenees’. Very tender with a particular generous milky twist, best served medium rare, this is extremely premium lamb.

Mango Sticky Rice
The Chef has decided to revisit a classic Thai sweet, Mango Sticky Rice. The dessert comes with three plates, the main one a variation with the sticky rice flavored with Pandan, fresh mango Nham Dok Mai from Chiang Rai served with coconut sorbet. The whole dish will be perfumed with warm coconut cream. The two side dishes will be built with a combo of coconut, white chocolate, peanut, Pandan, crispy yellow mung beans and most significantly a mango blossom (The blossom flavors will be an al-in-one mango sticky rice). A beautiful combination of fine French cuisine and Thai tradition.
