Nimitr Presents “The Voyage Through Thailand”  Inspired by the Memories of Travel during Thailand’s Peak Season

​Bangkok, Thailand – August 2025 – Nimitr Restaurant & Rooftop Bar invites guests on a rare culinary journey through the diverse regions of Thailand—North, Northeast, Central, and South—with “The Voyage Through Thailand” series, inspired by the memories of travel during Thailand’s peak travel season.
 
Expertly crafted by our chef team, each regional specialty is reimagined in a contemporary style while preserving its authentic flavours. The series highlights the richness of local ingredients and reflects the abundance of Thai agriculture and the deep-rooted culinary heritage passed down through generations—offering every diner a taste of Thailand through the eyes of a modern-day voyager.
 
The Voyage Through Thailand series will be available from 1 September to 30 December 2025, daily from 5.00 p.m. to 11.00 p.m. Highlights include:

Goong Mae Nam Yang Sod Kai Kem (Central)
Succulent grilled river prawn served over delicate rice noodles, accompanied by baby carrots and broccolini, and topped with a rich salted egg relish and salmon roe.
Larb Pla (North)
A bold Northern Thai–inspired dish featuring tender mashed fish infused with herbs and fiery chilli, finished with a topping of crispy fish.
Gaeng Nua Kai Pum (Northeast)
Pan-roasted tender beef, paired with a bold and flavourful Kai Pum curry relish, infused with the rich aroma of traditional Thai herbs and spices.
Gaeng Gai Look Gluay (South)
Southern-style organic baby half chicken in banana curry, topped with glazed banana.

"Towards the end of the year, when the weather is ideal and travel across Thailand reaches its peak, I wanted to create dishes that evoke the memories of local experiences—reminding us of the journey we take as voyagers," said Chef Korawit Rungchat, Executive Chef. "For these seasonal specialties, we’ve researched and rediscovered rare regional recipes, using fine local ingredients to offer a beautiful blend of memory, flavour, and sustainability."
