Inspired by warm ruby and golden tones, this seasonal menu, “Sun-Kissed Seas,” captures the spirit of the early year—a celebration of new beginnings and abundance—bringing to life the region’s natural bounty through refined Thai flavours.
With thoughtful attention from our chef team, each amber-inspired dish is crafted using modern culinary techniques while preserving the distinctive flavours of local southern ingredients from both sea and land at their seasonal peak—from pink snapper, kiao shoots, and torch ginger flower to pink pomelo, ingredients that naturally embody the theme’s vibrant hues. This series highlights the richness and abundance of the Andaman Sea alongside the region’s fertile landscapes, complemented by aromatic spices and herbs that create vivid, lively colours and flavours, offering a delightful dining experience to mark the very beginning of the year.
