Terrace Rim Naam, Mandarin Oriental, Bangkok’s celebrated  al fresco Thai restaurant, is delighted to welcome Chef Pom, Phatchara Pirapak, as its newly appointed “Chef de Cuisine” to further elevate the restaurant’s cuisine as she weaves in her own personal twists to create remarkable Thai dishes of distinction.

Chef Pom is a prodigy who lost and found herself in the kitchen. Growing up in a Thai family that mostly enjoyed eating outside the home, she had little experience in the kitchen. Chef Pom first tried cooking at age 13 under the watchful eye of her grandmother and quickly realised that Thai cuisine was her true passion. Before long, she dreamed of some day running her own restaurant. Chef Pom first worked in a professional kitchen at age 21 as Commis in Siam Wisdom Restaurant and worked tirelessly to develop her skills. Her hard work, passion and dedication were rewarded in 2017, when Saneh Jaan, where she was Thai Head Chef, was awarded a Michelin Star.

Chef Pom’s philosophy is to source only the freshest seasonal Thai ingredients. At Terrace Rim Naam she has created a selection of new authentic Thai dishes with her own unique twists. Starting from 8 July, her signature dishes will include a Thai dip of grilled river prawn paste, chili and lemongrass served with seasoned vegetables; traditional coconut soup with gourami fish and blue swimmer crab curry with wild betel leaves; and slow-braised duck leg with herbs and coconut milk. These dishes will be offered alongside an à la carte menu. The overall concept of Terrace Rim Naam is continuing to evolve under Chef Pom’s leadership, but the heart of the restaurant remains unchanged. Chef Pom’s new approach leans toward the mastery of cooking technique to showcase Thai dishes that are rare, special and hard to find.

“I am excited to join Terrace Rim Naam and to work with such a great team.  Thai cuisine is in my blood and I can be my best when lovingly preparing this style of food. With my new menu I will revive original recipes to bring them to the tables of the new Terrace Rim Naam,” said Chef Pom.

Terrace Rim Naam is set in an atmospheric al fresco environment, directly across the river from the hotel, overlooking the majestic Chao Phraya River. Chef Pom’s menu will be offered between 5 pm and 10.30 pm nightly.

Sala Rim Naam, housed in a richly decorated traditional Thai-style pavilion adjacent to Terrace Rim Naam, continues to offer a unique cultural experience and a Thai menu by Chef Prasert Sussadeewong.
