The Khao Chae Jim Thompson set features freshly harvested Thai jasmine rice, cooked to perfection and steamed in the traditional method. Delight in the fragrance of Thai jasmine, complemented by organic summer flowers that float in pure water. The Khao Chae set, served alongside savory and sweet dishes, includes Fried Shrimp Paste Balls, with shrimp paste (Kapi) providing a rich, umami-packed base, perfectly balanced by aromatic herbs and spices. Sweeten Eagle Ray serves a tender and slightly firm texture prepared in sweetened sauce. Fried Dried Large Red Chili Fish Stuffing combines sun-dried snakehead fish, seasoned with herbs and spices, presented in a dried large chili coated with batter and fried until golden brown. Sweet Preserved Chinese Radish uses caramelized palm sugar with sweet preserved Chinese radish. Shallot with Fish Stuffing fills savory sundried marinated snake head fish and shallot stuffing with a seasoned mixture, blended with aromatic herbs and spices. Sweetened Pork Threads and Sweetened Beef Threads combines shredded meat, cooked with a sweet and savory seasoning from local palm sugar and fish sauce.
This exquisite Khao Chae set is served with intricately carved vegetables and fruits, including seasonal sour green mango, sweet mango, fingerroot, fresh cucumber, spring onions, and chili peppers. These vibrant ingredients are designed to refresh the palate and enhance the overall flavor sensation.
To conclude the experience, diners can delight in Jim Thompson’s unique dessert - Som Chun Lychee with Marian Plum and Mulberries in Syrup, infused with the fragrant zest of Somza and Thai jasmine, accompanied by organic summer flowers.
To fully enjoy Khao Chae in Jim Thompson style, start with the savory dishes, beginning with shrimp paste balls (louk kapi), then salted fish, followed by others in any order. After relishing the flavors, take a spoonful of rice and sip the chilled flower-infused water.
Avoid mixing accompaniments in the Khao Chae bowl to preserve its delicate fragrance. You can alternate between savory and sweet bites or follow the traditional order—savory first, sweet last—whichever you prefer.
