The St. Regis Bangkok invites guests to experience Italian epicurean excellence at VIU with Amici Night on October 26, 2022 at VIU.
The four-hand dinner, created by Gaetano Palumbo, Executive Chef of Sheraton Grande Sukhumvit and Chef Kesinee Damrongsakul, Executive Sous Chef of The St. Regis Bangkok, is paired with wines from Italy’s prestigious UNESCO World Heritage vineyards.
The 5-course dinner starts with an amuse bouche created by Chef Kesinee featuring Ossetra Caviar, presented alongside Crab, Green Apple Jelly, Smoked Cream Fraiche, and Potato Lavosh.
The second course comprises a duo of dishes showcasing the mastery of both chefs, including a Cured Salmon, Beetroot and Mozzarella Foam by Chef Gaetano and a Seared Hokkaido Scallop, Roasted Cauliflower Soup, and Cauliflower Crisps by Chef Kesinee. For the next course, Chef Gaetano recreates an authentic flavor of Italy with Homemade Beef Agnolotti with Castelmagno Cheese and Black Truffle.
Diners enjoy a surf and turf main course, with Chef Gaetano creating the flavorful Coffee Marinated Lamb Chops served with Artichoke, Anchovy Sauce and Raspberry, and Chef Kesinee preparing an exquisite Poached Cod Fish with Cod Mousse, Beurre Banc with Green Herb Oil.
Wrapping up the gastronomic journey with a decadent note, Chef Kesinee presents a Pear Creamux, Lavender Brulee, Pistachio Malto, followed by delicate Petit Four with coffee or tea.
To elevate the dining experience, an optional wine pairing includes handpicked labels from the UNESCO Heritage-listed wine regions of Lazio IGT and Toscana IGT.
