In the food festival, ‘Gourmet Tastival’, there will be an assembly of exclusive dishes, hard to find anywhere else, from every corner of the world. The complete selection of delectability invites all to experience many exclusive menus, including the 4 super special menus created by Chef Shinji Inoue for the ‘Gourmet Tastival’ event only.
Starting off with the Autumn Shoyu Soba with Truffle and Porcini, Chef Shinji’s signature menu. This shoyu soba menu is a chicken soup base ramen that uses a special recipe shoyu from 3 different prefectures of Japan. The shoyu is combined with soup to achieve the rich flavor that is perfectly paired with fresh wheat flour noodles from Hokkaido. It is then served with truffle and porcini mushrooms.
Second is the Signature Hokkaido Gyokai Shio Soba, another popular menu of NO NAME NOODLE. This dish uses a chicken base soup combined with a seafood base soup using ingredients from Hokkaido such as the kombu (seaweed), variety of dried fish, Japanese scallops, and Japanese clams. Then served with the fresh wheat flour noodles from Hokkaido.

The second rice menu is the Wagyu Don, premium wagyu beef on fluffy Japanese rice and topped off with raw or onsen egg, resulting in a melt-in-your-mouth scrumptious experience.
