The course is created by the gold medal-winner of Best Sustainability Award for sustainable ingredients, appliances and containers selection under the concern for environment, nature conservancy and sustainable sharing with the society from the “DILMAH TEA INSPIRATION FOR 21st CENTURY” competition.

We have found winning chef and mixologist winners in various awards from many acclaimed hotels from different provinces across Thailand. Thus the brand would like to build on activity from the competition to take media members on a trip to experience premium special menu crafted with quality Ceylon tea from Dilmah at the competition winners’ hotels from each award. This time, we take them to Chiang Rai, Anantara Golden Triangle Elephant Camp & Resort, gold medal- winner of Best Sustainability Award which is awarded for contestant who selected ingredients, appliances and containers based on the concern to the environment, nature conservancy and sustainable sharing with the society.”

Chef Pisit Jinopong and Mixologist Kanjana Wanarrat from Anantara Golden Triangle Elephant Camp & Resort, gold medal- winner of Best Sustainability Award, is an award for sustainable ingredients, appliances and containers selection under the concern for environment, nature conservancy and sustainable sharing with the society from “DILMAH TEA INSPIRATION FOR 21st CENTURY” competition. The special dishes created for this trip starts with Acai Berry and Local Avocado Bowl, healthy smoothie bowl packed with natural ingredients that provide health benefit found from local source in Chiang Rai such as famous 10-year honey blended with papaya, avocado, and lemon from the farm including, added with the mixture of premium Dilmah Blueberry & Pomegranate Tea to enhance the premium taste and topped with coconut foam topping for more indulgent look.
Next, Smoked Salmon & Local Chiang Rai Cheese Roll, fine salmon seasoned in wasabi mayonnaise sauce and honey mixed with Jasmine Tae and Ceylon Tea with Ginger Aroma from Dilmah, wrapped with beautiful color of butterfly pea jelly and garnished with Mango caviar for pleasant appearance. It’s served with Summer Breeze mocktail to offer refreshing feeling with Lemon and Orange Aroma Tea from Dilmah. Add sour taste with fresh squeezed lemon and orange juice and give perfect proportion of sweet taste with syrup.

It’s served with aromatic Rose Bubble cocktail mixed on the combination of Southern Comfort whiskey, syrup and Rose Tea in Vanilla Aroma from Dilmah, added with Prosecco sparkling wine and garnished with rose petal for more attractive appearance. Finish the course with Crispy Local Beef Massaman Roll, Massaman curry cooked with the best part of beef through the meticulous process in the ingredients of sweet plum to serve with prawns. Next, Seasonal Organic Leaves and Vermicelli Spring Rolls, fresh spring rolls stuffed with Chiang Rai organic vegetables topped with the sauce seasoned with Dilmah Peppermint Tea with lychee from Chiang Mai, tamarind, honey, and red chili to give perfect balance of sweet and sour taste, and Smoked Duck Breast in Earl Grey Tea, soft duck breast smoked in aromatic tea topped with spring roll sauce for delicious flavor.
