NIKOLAS RAMIREZ CHAR’s Chef de Cuisine

​With 11 years of working experience in USA and Asia, Hawaiian chef Nikolas Ramirez takes charge of CHAR’s kitchen to present diners with a unique cuisine that transcends both culinary and cultural borders.
 
After finishing his study in Culinary Arts at Santa Barbara City College CA, Ramirez started his culinary journey, apprenticing at Mimosa, classic French restaurant in California. He trained under the guidance of master chefs and tirelessly worked his way up in the culinary world, learning everything there is to know to run a successful restaurant. 
 
He worked at five noted restaurants in California from 2008 - 2014, including being a Chef de Cuisine at Wine Cask, the pinnacle restaurant in Santa Barbara. He then moved to Thailand to continue his journey, working as the Chef de Cuisine of 22 Kitchen & Bar at Dusit Thani Bangkok.

​His previous position before joining CHAR as its chef de cuisine is the Creative Development at Gaggan Restaurant, No.1 in Asia's 50 Best Restaurants for three consecutive years.
 
CHAR’s contemporary grill has been elevated to the next level by Ramirez’s passion and his vision for honest and true flavours. You can taste passion in every bite as Ramirez is very hands-on in every aspect of CHAR from conceptualizing menu, training the staff, sourcing artisan and organic ingredients, and ensuring the smooth operation of CHAR kitchen and restaurant. He draws on his extensive and vast experience to deliver one-of-a-kind menu at CHAR.
