Khum Hom's Khao Chae set menu features chilled jasmine rice, jasmine-scented water, and nine traditional side dishes, including Look Kapi (caramelized shrimp paste balls), Prik Yuak Yud Sai (stuffed banana peppers), Moo Pia (deep-fried minced pork), and Pla Yee-Son Wan (sweet stir-fried Yee-Son fish). A Mayong-chid Makrood Loy Kaew (marian plum and kaffir lime in light syrup) summer dessert is served with the set menu.
Chef Ian Kittichai has created this classic recipe using carefully selected ingredients from various regions of Thailand. The dish features aromatic jasmine rice from Surin, Chu-tin scented candles from Bangkok, marian plum from Nakhon Nayok, coconut sugar from Pleanyondtar Community Enterprise in Samutsongkram, shrimp paste from Pattalung, and salted egg from Surat Thani.
