WITH numerous accolades to his name, not to mention three Michelin stars at his De Leest restaurant in Vaassen, The Netherlands, Chef Jacob Jan Boerma looks set to cook up a real treat when he takes control of the kitchens at Colonnade to cook his avant-garde cuisine brimming with Asian, Spanish, Southern European, and North American influences. Adding extra flair to proceedings will be Guillermo Gonzalez, a talented mixologist from Hiding in Plain Sight bar in Amsterdam, who’ll create a range of cocktails specially made to pair with the food.
