The concept of Zuma was born as a result of one chef’s obsessive passion with Japanese cuisine and his conviction that London was the place to develop his take on traditional Japanese food.
 
A fortuitous meeting between Rainer Becker and Arjun Waney not only resulted in the realisation of a vision, with Zuma restaurant opening in Knightsbridge in 2002, but was also the beginning of a partnership that successfully expanded the concept worldwide.
 
Zuma has successfully launched several locations across the world including Hong Kong (2007), Dubai (2008), Istanbul (2008), Miami (2010), Datca Peninsula (2013), Abu Dhabi (2014), New York (2015), Rome (2016), Las Vegas (2017) and most recently Boston (2019). Zuma Bangkok opened in November 2011.
 
Design
 
An essential component of Zuma is in its surroundings that are inspired by the 4 elements of Earth, Fire, Water and Air. The esteemed Japanese design company Super Potato was commissioned to materialise the vision. Designer, Noriyoshi Muramatsu, quickly developed an emotional attachment to the project and used his expertise, both spiritually and aesthetically.  Amid his symbolic design, he introduced calming water features and used antique pine, re-cycled from old Japanese houses. He believes the wood to hold the goodwill of the previous owners. It took over 3 months of travel and research, to locate the exact granite and different woods that were ultimately selected for the project. Zuma is about a complete dining experience and complement the taste and flavour of the food.

Literally meaning “soaked rice”, this seasonal specialty originated in the Mon Kingdom, before it was adopted and enhanced by the Royal Thai court during the reign of King Rama V (1868-1910).
 
The Khao Chae set menu at Siam Tea Room starts with an appetizer of watermelon with dried fish and crispy shallots, accompanied with a refreshing welcome drink of lychee and orange with Italian soda.
 
This is followed by the full Khao Chao feast, featuring rice in chilled jasmine-infused water, served with all the authentic accompaniments such as a fried marinated shrimp paste bun, young pepper stuffed with minced pork and shrimp in egg, deep-fried shallot stuffed with fish, sweetened shredded pork, sweetened shredded fish, fried butterfly pea stuffed with pork and shrimp, sweet pickled turnip, and fresh mixed vegetables.
 
Cool, aromatic and refreshing, Khao Chae has now become a summertime favorite of the Thai people and the traditional dish of Songkran, Thailand’s New Year festival.

For the latest 4-course sharing experience, Chef David handpicks seasonal products from Europe and Thailand, including Norwegian Langoustine, French Caviar, French White Asparagus, Italian Spring Lamb, Swiss Pike Perch, Thai Mackerel, Chicken, Caviar, Sweet Corn, Spring Lamb, Morels, as well as his personal favorite such as Japanese Uni. Meliá Chiang Mai Introduces New ‘360° Cuisine’ Thai Set Menu

Meliá Chiang Mai’s signature restaurant Mai Restaurant & Bar will serve a new Thai set menu with innovative dishes crafted by a thoughtful cooking process designed to minimize food waste and reduce greenhouse emissions.
During the second quarter of 2023, the 21st floor restaurant will serve the four-course 360° Cuisine Thai set menu that features organic produce from the hotel’s nearby farm and uses every part of each ingredient possible before food waste is returned to the farm as fertilizer.
 
The menu includes new dishes Makreau thed consommé comprising farm-grown tomato with pearl summer squash, main course Hung Ley curry style pulled pork lasagna with pomelo peeled coconut cream sauce, and a warm, overripe banana cake with mixed nuts butter scotch for dessert. 
 
The new set menu starts out with favourite Khao Kaab Hor Goong, comprising chilled prawn salad in sesame rice paper wraps with piquillo peppers, fried tofu and fresh Vietnamese mint.  Another choice for the main course is grilled curry assorted fish belly in banana leaf, sweet basil stems and leaves.
Priced at THB 1,400 net per person, the set menu is available daily at Mai Restaurant & Bar between 6pm – 10pm from 1 April to 30 June 2023.

Under the expert guidance of new Executive Sous Chef Khun Parthomrat Rakkanam this well-established restaurant, located just a short walk from BTS Phrom Phong, presents an exciting new selection of Mediterranean dishes designed to appeal to local residents and discerning international diners visiting Bangkok from every continent.
 
“Our new à la carte menu features an extensive range of international organic produce, sourced from recognized and approved sustainable markets, whilst also showcasing local ingredients from virtually every province in Thailand,” explained Chef Parthomrat.
 
“This reinforces our policy and our determination to support local, regional and national farmers, fishermen and growers.” Thai produce in daily use at Scalini includes herbs, spices, fruit, vegetables, rice, seafood and shellfish.
 
Mediterranean cuisine is well known for its proven benefits to health and wellbeing and this forms the basis of Chef Parthomrat’s new menu at Scalini.
 
The à la carte choices begin with such tempting offerings as fresh Normandy Fine de Claire oysters, Prosciutto crudo and Bouchot Mussels shipped fresh from the Brittany coastline in France and served in aromatic spices and white wine.
 
Another highly recommended dish is the lobster bisque with tasty Boston lobster morsels, caviar and cream.
 
The ‘Main Elements’ section of the new Scalini menu embrace a tantalizing selection of meat, fish and crustacean dishes such as char-grilled pure Black Angus ribeye, a tomahawk lamb rack made from succulent Australian lamb, and pan-grilled Mediterranean style sea bass served in herbs and spices with sautéed Phuket sea clams and a spicy tomato marinara.
 
“Every Scalini steak is made from Pure Black Australian Angus 270 days grain-fed beef reared at the Rangers Valley station on the Northern Tablelands of New South Wales, Australia,” explained Chef Parthomrat. “Rangers Valley is one of the world’s most respected premium marbled beef producers, producing beef of the highest quality that is consistently tender and absolutely delicious.”
