Silk Road is importing pigeon from Hong Kong during March and April and Chef Kam is preparing this delicacy in a variety of cooking techniques that includes marinating in Cantonese herbs and spices and roasting, grilling, braising, and as a soup.
Pigeon is one of the great specializations of Hong Kong, renowned both for its tender meatiness and also as a symbol of peace and prosperity.
Using the wok the pigeon can be served with Kun Lun sauce or black pepper sauce. There are two ways of deep-frying, with the pigeon either served with lime sauce or stuffed with minced prawn. Braising the pigeon with Cordyceps fungus brings out the gamey, earthy flavors, and pigeon smoked with Chinese leaves is especially aromatic.
A Hong Kong pigeon individual set menu is served with four pigeon courses and an almond dessert at THB 2,700++ per person, while the à la carte offers five different pigeon recipes starting at THB 600 per dish.
The menus are available daily from 1 March to 30 April 2024, served at lunchtimes from 11.30 AM to 2.30 PM and dinner from 6.00 PM to 10.00 PM. The dishes are also available to take away.
