​ABar Rooftop, the dramatic top floor lounge at Bangkok Marriott Marquis Queen’s Park, is inviting guests to “BeGin the Discovery” this April and May with an appetizing new offer that features the perfect combination of premium drinks, sensational snacks and spectacular views. Throughout the month, a pair of packages will blend the best mixology from ABar Rooftop with the culinary creativity of Akira Back, the innovative Asian dining destination, and upbeat music from live DJs.
 
Under the “Discovery Set” (THB 999 net for two persons), guests can savor two mesmerizing mocktails from a special menu, such as Berry Me Over (a blissful blend of mixed berry purée, fresh lemon juice & sparkling tonic), Rose Tea (fragrant rose tea with rice vinegar), Butterfly Effect (a vibrant blend of lychee, lemon & butterfly pea juice with plum fragrance) and Sky Garden (a creative concoction of passionfruit juice topped with pineapple foam).
 
These mocktails can be paired with up to three tempting tapas-style plates from Akira Back, for example Spicy Tuna Tacos (served with Japanese cucumber & spicy ponzu aioli), Dynamite Roll (tuna, avocado, coleslaw & Japanese cucumber salad), Spicy Chicken Popcorn (karaage chicken with pickled jalapenos & spicy aioli), Angry Salmon Roll (with chojang sauce, crab stick & cucumber) and AB Burrito (chicken, foie gras, mixed veggies & chipotle mayo). Dessert lovers can opt for the sweet-sharp Lime Cheesecake (served with vanilla crumble).
 
Alternatively, guests can elevate their evening with the “BeGin Set” (THB 1,500 net for two persons), which combines premium drinks with delectable dishes from Akira Back! This enticing offer lets revelers craft their ultimate G&T from a variety of choices, infused options with elderflower, strawberry and quince. Two drinks can be paired with three of the above-mentioned tapas-style plates.
 
Weekend evenings will also be enlivened with live sets from DJ Gift (every Friday) and DJ Norbert (every Saturday), 19.00 – 22.00 hrs., who will keep guests entertained with deep house, chilled pop and electro beats.

From 20th March to 30th April 2022, Mondo restaurant features a unique offering, Khao Chae, a classic Thai dish only served during summer time.
 
Replicated from a Royal dish during King Rama IV era (1851-1868), Khao Chae is steamed rice soaked in jasmine-scented water and served with five side-dishes: luk krapi (deep-fried fish and shrimp paste balls), yisok foi (deep-fried and shredded fish), prik yuak sod sai (sweet pepper stuffed with minced pork), hua chai po waan (Sweet Chinese radish) and moo and neau foi (sweet shredded pork and beef). Serve with fresh vegetables and condiments such as green mango, cucumber, white turmeric and spring onion to balance out the sweetness from the side dishes.

For an even more elevated celebration, guests can opt for the exclusive Savelberg Takeover at Tree Tops Sky Dining & Bar where doyen of Nouvelle Cuisine Henk Savelberg will be serving fine gastronomy up in the tree tops to a live saxophone solo. In an exclusive three-day event, the renowned Michelin-starred chef will showcase his elegant, modern French and Dutch fare adapted for the tropics in a seafood-centric menu. Opening with Belon oyster and foie gras macaron appetisers, the five-course set will invite diners to explore exquisite flavours of blue crab, scallop and Langoustine, as well as enjoying Quail Rouleau with foie gras and crumbly Dutch apple cake with yuzu espuma. The Savelberg Takeover will take place on 14-16 April, with two seatings, at 5:30 pm and 8:30 pm, and is priced at THB 4,200++ per person for a five-course meal. Wine pairing is available for THB 1,998++ per person.
 
Red-blooded gourmets who will travel the world for standout culinary experiences can book a special overnight package combining Michelin dining and luxury accommodation. Guests can choose to stay in one of the Sino-Thai-style villas clustered around palm-fringed lagoon pools or in an elegant room. Starting from USD 577++ a night based on double occupancy, the Michelin-Starred Easter Songkran Getaway package is bookable for stays between 13 – 17 April 2022, with reservations accepted until 5 April 2022. Khao Chae is exiguous as it is the most time and effort needed food in Thai cuisine. Chef Bang-On brings jasmine rice to slightly boil then carefully polishes the half-cooked rice until shiny, then steams again before soaking in the cold, candle smoke and flower scented water. Another example, Kapi Thod, deep-fried shrimp paste balls, the main highlight of Khao Chae, requires 8 hours to cook from scratch. Chef Bang-On and her team spend a lot of time to prepare and cook 9 different the side dishes to provide you a memorable Khao Chae experience.
For the best Khao Chae Suvarnabhumi dining experience, it is recommended to start with eating the most savoury side dish like Kapi Thod first, chew to taste. Then follow by having soaked rice and a taste of the scented water again to absorb the aroma and taste. Then continue with sweet side dishes such as Pla Chon Waan Pad Hang , sweetened snakehead fish and other savoury dishes. Signature Khao Chae 2022 by Ruen NoppagaoServed in Benjarong Ware from March 15 - May 15, 2022

Our signature Khao Chae or rice in iced water with side dishes is served in exquisite Benjarong porcelain ware  illustrated with peafowl motif which symbolizes abundance and luck. The Benjarong plates were created by craftsmen from Ayutthaya province exclusively for special Khao Chae sets served at Ruen Noppagao Sathorn Soi 6 this year. The restaurant’s Khao Chae comes in 3 options including: original, Halal, and vegetarian. Each includes 4 courses.

The first course is watermelons with sweet dried fish made of sun dried snakehead fish from Sing Buri province. The fish is grilled on a coal grill and pounded until it becomes flossy. Then, the fish is stir fried and seasoned with coconut flower sugar from Samut Sakhon, fleur de sel, and deep-fried shallots before it is served with cold watermelons.
 
 
The second course is called “Kung Hom Sabai” or shrimps wrapped in spring roll sheets. These shrimps are sourced from a network of artisanal fisheries in Surat Thani province. The shrimps are marinated with coriander roots, garlic, and pepper. They are wrapped in spring roll sheets and deep fried. The dish is served with bitter orange dipping made with Ruen Noppagao’s secret recipe!
The third course, or the main course, is rice in iced water served with 7 side dishes including fried shrimp paste balls, red onions stuffed with sweet dried fish, deep-fried starch-coated salted egg yolks, stuffed bell peppers, flossy pork, sweet stir fried snakehead fish, fragrant preserved turnips stir fried with lard, and fresh vegetables such as sour mangoes, shallots, kaempferia, and cucumbers. The iced water is made of mineral water from Doi Ngam Village in Mae Suai, Chiang Rai province. The vegetables are boiled at 100 degrees for 15 minutes to kill harmful agents and left to cool down in a terracotta jar for one night. The vegetables are then left in water with 4 fragrant flowers–damask rose, vallaris glabra, Songkhla ylang-ylang, and jasmine for another night and smoked with Thai fragrant dessert candles. As for rice, old Sao Hai rice is cleansed with clean water and purified with alum until the water is clear. After that, the rice is boiled in a terracotta pot until rice grains are puffed open and washed again with cold water. Lastly, the rice is dried, steamed 3 times, dried again, left in a container with 4 fresh flowers, and smoked with Fragrant dessert candles for one night.
The last course is 4-cup dessert usually eaten in summer or the Songkran New Year festival. The dessert comprises “Khai Kob” (lemon basil), “Nok Ploi” (sweet rice noodles), “Bua Louy” (popped rice), and “Ai Tue” (black sticky rice). This rare dessert is served at Ruen Noppagao only during this period.
