Hua Hin Marriott Resort & Spa, the idyllic retreat on Thailand’s golden coast, is excited to welcome the celebrated European chef Jan Hoffmann for an exclusive week-long residency at Big Fish & Bar, its stylish seafront restaurant.
Chef Jan, who has worked in a series of Michelin-starred restaurants across Europe, will bring his distinctive style of culinary creativity to Asia for the first time from January 12th -20th, 2018. In this upcoming event, Chef Jan has created two distinctive menus featuring unique dishes that reflect his passion for fresh produce, which will be perfectly paired with fine wines.
Diners will be able to savor a fantastic four-course dinner from Monday to Thursday, while an exquisite six-course menu will be served from Friday to Sunday. Each dish crafted by Chef Jan will capture his inimitable contemporary style, using ingredients rarely seen in Thailand.
“Jan Hoffmann is a genuine culinary icon. He has worked in many of Europe’s leading restaurants, including three Michelin-starred destinations, and alongside some of the industry’s most influential chefs. He is also a pioneer of vegetarian cookery and his menu at Big Fish & Bar, while not being entirely vegetarian, will reflect his love of natural, organic produce. We look forward to welcoming Chef Jan to Thailand and introducing our guests to his wonderful cuisine,” commented Chef Mario Hofmann, Executive Chef.

Over the course of his career Chef Jan has worked alongside a series of celebrated chefs, including Thomas Neeser at the legendary Hotel Adlon in Berlin, Matthias Schmidt at Villa Merton in Frankfurt, and Juan Amador at Amador in Langen, which was named as one of the top five restaurants in Germany during his tenure. Chef Jan has also worked at acclaimed Seehotel Überfahrt, which holds three Michelin stars.
His crowning achievement however, came at Seven Swans, the famous Frankfurt restaurant where he achieved his first Michelin star. In a bold move that reflected Chef Jan’s love of natural ingredients, he then moved to an all-vegetarian menu. But even after this dramatic decision, Seven Swans retained its prized star and became one of only four vegetarian restaurants in Europe at that time to be included in the Michelin guide.
Now running his own culinary consultancy business, Chef Jan works across the world and is planning to open his own highly-anticipated restaurant in March 2019.
Hua Hin Marriott Resort & Spa is delighted to welcome Jan Hoffmann to Thailand for his first-ever Asian residency. This is another great example of how Big Fish & Bar is elevating the level of contemporary cuisine in Thailand, bringing world-class chefs and eclectic culinary styles to diners on the country’s golden Gulf coast.
