New Scalini dishes capture the essence of Mediterranean dining

There’s an exciting new look to Scalini, Bangkok’s popular city centre Mediterranean restaurant located conveniently on Sukhumvit Soi 24.
 
Under the expert guidance of new Executive Sous Chef Khun Parthomrat Rakkanam this well-established restaurant, located just a short walk from BTS Phrom Phong, presents an exciting new selection of Mediterranean dishes designed to appeal to local residents and discerning international diners visiting Bangkok from every continent.
 
“Our new à la carte menu features an extensive range of international organic produce, sourced from recognized and approved sustainable markets, whilst also showcasing local ingredients from virtually every province in Thailand,” explained Chef Parthomrat.
 
“This reinforces our policy and our determination to support local, regional and national farmers, fishermen and growers.” Thai produce in daily use at Scalini includes herbs, spices, fruit, vegetables, rice, seafood and shellfish.
 
Mediterranean cuisine is well known for its proven benefits to health and wellbeing and this forms the basis of Chef Parthomrat’s new menu at Scalini.
 
The à la carte choices begin with such tempting offerings as fresh Normandy Fine de Claire oysters, Prosciutto crudo and Bouchot Mussels shipped fresh from the Brittany coastline in France and served in aromatic spices and white wine.
 
Another highly recommended dish is the lobster bisque with tasty Boston lobster morsels, caviar and cream.
 
The ‘Main Elements’ section of the new Scalini menu embrace a tantalizing selection of meat, fish and crustacean dishes such as char-grilled pure Black Angus ribeye, a tomahawk lamb rack made from succulent Australian lamb, and pan-grilled Mediterranean style sea bass served in herbs and spices with sautéed Phuket sea clams and a spicy tomato marinara.
 
“Every Scalini steak is made from Pure Black Australian Angus 270 days grain-fed beef reared at the Rangers Valley station on the Northern Tablelands of New South Wales, Australia,” explained Chef Parthomrat. “Rangers Valley is one of the world’s most respected premium marbled beef producers, producing beef of the highest quality that is consistently tender and absolutely delicious.”
The Healthy Elements choices include vegetarian and vegan dishes such as Millet Risotto and Vegetable Frittatas.
 
Naturally, Scalini’s Italian heritage means that diners also have a choice of tasty home-made pizzas and pasta dishes such as Risotto al Funghi and Spaghetti alla chitarra con frutti di mare which features handcrafted pasta from Abruzzo, Boston lobster and Blue Crab.
 
“The Scalini dining experience would not be complete without enjoying at least one of our home-made desserts such as Chocolate Sambuca or my very own Vanilla Crème Brulée”, said Chef Parthomrat.
 
The choices at new-look Scalini extend to the finest selection of cold cuts and cheeses and this is proving to be very popular with lunch-time business and leisure diners as well as shoppers taking a break from their hectic shopping experiences at the adjacent Emporium Mall.
 
Indeed, Chef Parthomrat is stressing that Scalini is not just a venue for formal à la carte dining but also offers a welcoming, informal vibe that suits guests looking to enjoy plates of nibbles with a glass or two of wine. 
 
Scalini’s new Mezze Platter for two or four guests features quality Italian cold cuts such as Parma Ham and Salami. The French, Italian and Spanish cheeses include Manchego, made from sheep’s milk sourced in the La Mancha region of Spain.
 
Scalini’s extensive wine list is managed by new Sommelier Khun Papinwit Tomorn whose recent experience includes spells with international hotel brands in Krabi, Phuket and his home province of Phang Nga.
 
The new Scalini à la carte menu includes recommendations by Khun Papinwit for wine pairings that best complement Chef Parthomrat’s dishes created and prepared in the restaurant’s dynamic open-front kitchen. (See menu for more details.)
 
“Our new menu captures the essence of Mediterranean dining and our team is proud to present a fabulous range of dishes that genuinely represent the culinary traditions of nations with a Mediterranean coastline,” added Chef Parthomrat.
