The new Scalini à la carte menu captures the magic and marvel of Mediterranean cuisine, with a fabulous selection of dishes from Morocco, Spain, France and Italy.
Created by Khun Teeranand (Joe) Pisolyabud, newly-appointed Sous Chef at the award-winning restaurant, Scalini. The diverse dishes journeying from Morocco to Italy, cater for every palate and are combined with fresh produce from the Royal Projects throughout the Kingdom of Thailand.
Our journey starts from the southern shore of the Mediterranean Sea, where lies the fascinating city of Casablanca, Morocco. A popular main course from the city is a traditional Moroccan style L’ham M’hammar, slow-braised Moroccan-spiced lamb shoulder. Served at Scalini, L’ham M’hammar is infused with aromatic spices, complemented by the sweetness of dried prunes and turmeric-infused couscous. Another popular main course, featured on the menu is, Ras El Hanout Red Snapper, Moroccan style. A tender and flaky fish from Gulf of Thailand, which is slow-roasted with a Moroccan spice marinade and accompanied by succulent tomatoes & turmeric-infused potatoes. Also featuring Casablanca’s famous Date and Rice Pudding which is served with ripe mango, coconut, vanilla sauce, roasted almonds and crispy corn.
From the streets of Morocco, moving to the amazing city of Barcelona. This city provides the inspiration for several dishes including a mouth-watering Spanish Tapas that includes roasted chicken croquet, bravas potato, Spanish garlic shrimps, Paleta ham and Manchego truffle cheese. Barcelona is also home to Chef Joe’s celebrated dish, Morros Devasa Carrillera, a slow-braised beef cheek in balsamic sauce served with baby carrots, charred shallots, guanciale and potato mousseline.
Next stop at the bustling port city of Marseille in southern France. It comes alive with the Homard Thermidor, Mediterranean Lobster which is served in two ways; one with earthly truffle & another with Hollandaise sauce, green asparagus, and baby carrots. Another celebrated main course is the Fillet Mignon; grilled beef tenderloin. It is a French-Thai contemporary dish, served with sautéed baby spinach and port wine jus. The menu also serves, the famous Confit de Canard from Marseille, which is slow-poached free range duck at 65 degrees Celsius and then served with aromatic herbs, pumpkin purée, wild berries, and citrus jus.
Final stop at the island of Sicily, which is full of mystery and is also home to some of Italy’s most popular food and wines. Chef Joe presents a tasty vegetarian dish from Sicily, the Risotto Parmigiana. It is a toasted Carnaroli risotto with slow-baked eggplant stuffed with cream, Parmesan cheese and tomatoes concassé.
