With a focus on finest seasonal ingredients, Master Chef Shigeru Hagiwara and his team at Yamazato, The Okura Prestige Bangkok’s award-winning signature Japanese restaurant, are unveiling a new mouth-watering Kaiseki experience in September based on the very best produce available from Japan at this time of year.
 
At Yamazato guests and patrons can indulge their appetite for authentic Japanese Kaiseki, a culinary expression that makes the most of prime seasonal ingredients that unlock the secrets to exquisite Japanese flavours. Absolute quality, the freshness of the produce used and the techniques and flair with which it is prepared and presented are what make Master Chef Shigeru Hagiwara’s menus such a refine gastronomic experience.
 
This September, Yamazato features ‘Nagatsuki Kaiseki’ at lunch and dinner. Highlights from the ‘Nagatsuki Lunch Kaiseki’ at include fig, gingko nut, shrimp, white shimeji mushroom with tofu vinegar sauce as a starter; and all-time favourite assorted seasonal sashimi with tuna, yellowtail and momiji sea bream. This is followed by a platter of grilled Spanish mackerel with edamame, garnished with sweet potato and pickled tomato; assorted seasonal tempura with shrimp, cutlass fish, lotus root, elingi mushroom and Japanese green pepper; and a simmered rice dish with mushroom, whitebait salmon roe, nori-seaweed and oba leaf served with miso soup and pickles. The fantastic ‘Nagatsuki Lunch Kaiseki’ is completed with a delightful black sesame mousse with chestnuts and matcha sauce.

For those dining at Yamazato in the evening, the scrumptious ‘Nagatsuki Dinner Kaiseki’ highlights includes fresh soy milk skin, sea urchin, Chinese wolfberry and starchy soy sauce as an amuse bouche; tasty smoked marinated mackerel, shrimp, mountain potato, white shimeji mushroom, tomato, and caviar with starchy tosazu served as a starter; assorted fresh tuna, yellowtail, horse mackerel and sweet shrimp provide a wonderful sashimi course; and succulent sugiitayaki – grilled black cod with a yuzu sauce and scallop with butter, sweet potato, pickled myouga and gingko nuts as a main course; it is complimented by toothsome dishes such as duck ball with foie gras, taro, shiitake mushroom, carrot and okra; and assorted seasonal tempura including snow crab, shrimp, cutlass fish, elingi mushroom, pumpkin and asparagus. The savoury repast highlights in a traditional spectacular way with hot cha soba paired with momiji sea bream, shiimeji mushroom, honewort and yuzu. Dessert lovers can also end on an indulgent sweet note with black sesame mousse served with chestnuts and matcha sauce.
