Chef Joshua Rogers to present Tex-Mex flavors in set lunch and dinner menus, EPIC dinner and Sunday Brunch
The St. Regis Bangkok invites diners to discover the taste of Southwest America with guest chef Joshua Rogers from J.W. Marriott Phuket Resort & Spa from September 19 – 25, 2022.
In the latest guest chef series at VIU, Chef Joshua brings with him culinary creations inspired by the Tex-Mex flavors and slow smoked barbeque way of cooking from his childhood growing up in Arizona, USA.
A 3-course lunch offers a choice of starters, including Guacamole, Tostada de Pulpo (charred octopus with avocado and heirloom tomato), and Empanadas de Carne (Australian beef tenderloin, sweet corn stuffed flaky fried pastry). The taco main course includes a choice of Langosta Frito (Phuket lobster), Barriga de Cerdo (brown sugar pork belly), and Arrachera (Rangers Valley Australian ribeye), before ending with the Dark Chocolate Crème Brulee or Mexican Flan.
For a complete journey of taste, the 6-course dinner tasting menu starts with Guacamole and Chilaquiles (Crispy corn torilla, Rangers Valley Australian ribeye, chill Jalapeno). The fourth course continues with a Klong Phai Duck Arabes (Carnitas spiced duck, charred Phuket pineapple), before arriving at the main course – the Ranchero Wagyu Striploin, served with young charred spiced corn, verde gel, and ranchero salsa. The meal ends on a decadent note with Dark Chocolate Crème Brulee, made with chill cocoa nib tuile and lychee.
Chef Joshua continues the showcase of rich Mexican-inspired flavors in the EPIC Dinner Buffet and Sunday Brunch experiences, where the buffet spread is enhanced with special dishes including Pork Posole (slow braised pork shoulder in local dried chili). A live taco station offers a choice of Langosta Frito and Arrachera, complemented with freshly made salsas and guacamole.
