Rossini's at Sheraton Grande Sukhumvit, a Luxury Collection Hotel, Bangkok, will host an exclusive one-night wine dinner, "North to South Italy – A Journey Through Terroir," on Friday 12 June 2026 from 6:00 PM to 10:00 PM. Presented in collaboration with JW Marriott Hotel & Suites Saigon, the evening brings together Rossini's resident Chef Stefano Merlo and guest Chef Francesco Leone of Basilico, the Italian restaurant at JW Marriott Hotel & Suites Saigon, for a menu that travels the length of the Italian peninsula.

Across an evening of canapés, antipasti, pasta, a signature main course and dessert, the two chefs trace Italy's regional terroir from the cool north to the sun-soaked south — each course paired with a hand-selected Italian wine chosen to mirror the journey.
Guests begin with a selection of Rossini's canapés and a sparkling welcome of Nino Franco "Rustico" Prosecco Superiore Valdobbiadene DOCG, before moving through highlights that include Il Crudo di Mazara del Vallo — sweet raw prawns with almond milk, citrus and aromatic basil oil — and the Venetian Lingua Salmistrata alla Veneta, crispy pickled veal tongue with parsley and anchovy sauce. Chef Leone's Fagottini alla Porchetta, triangular ravioli filled with porchetta, pine nuts and raisin relish, leads to the evening's main: Manzo al Valpolicella, Wagyu tenderloin glazed in Valpolicella with Treviso tardivo radicchio and celeriac purée. The meal closes with the Sfera di Gianduja, a gianduja mousse encased in a crisp chocolate sphere with hazelnut praline and olive oil gelato, followed by Rossini's petit fours.

The accompanying wine flight spans five regions, moving from Veneto and Lombardy in the north to Campania's Irpinia and the island of Sardinia — featuring Mastroberardino "Morabianca" Irpinia Falanghina DOC, Ca' dei Frati Rosa dei Frati Riviera del Garda Classico, Mastroberardino "Redimore" Irpinia Aglianico DOC, and Sella & Mosca "Tanca Farra" Sardegna Alghero Rosso DOC.

At the heart of the experience is Cafe Madeleine’s new Ice Cream Bar — a playful riverside pop-up inspired by the charm of summer holidays along the Mediterranean coast, where soft serve and unhurried moments become part of the day’s ritual.

As part of the season’s programming, the hotel will also welcome the return of Riverside Rhapsody, an intimate live music performance set within the Arrival Courtyard for one evening only.

A Taste of a European Summer at Cafe Madeleine

Set along the hotel’s riverside promenade, Cafe Madeleine’s “101 Days of Summer” Ice Cream Bar captures the nostalgia and ease of a European summer escape — where afternoons stretch a little longer, dessert is enjoyed outdoors, and moments by the water feel effortless and spontaneous.

Designed as a refined take on the classic ice cream stand, the pop-up pairs soft serve creations with vibrant seasonal flavours and riverside views.
“At Cafe Madeleine, we wanted to create something that feels nostalgic,” says Michel Gunnar Eberhardt, Director of Food and Beverage. “The Ice Cream Bar draws inspiration from the feeling of a European summer holiday — relaxed afternoons, strolling by the water, and stopping for something refreshing along the way.”

Created by Executive Pastry Andrea Bonaffini, the menu balances indulgence with freshness, layering creamy soft serve with bright fruit notes, subtle textures, and refined finishing touches.

“Summer desserts should feel vibrant, light, and easy to enjoy,” says Chef Andrea Bonaffini. “Each creation was designed to capture the flavours and feeling of summer holidays, while bringing a playful sense of discovery to each experience.”

Signature creations include:
  • Mango Passion — tropical soft serve layered with passion fruit sauce, mango elements, and dark chocolate pearls
  • Pistachio Raspberry — soft serve with raspberry sauce, white chocolate pearls, pistachio macaron, and fresh berries
  • Banana Caramel — vanilla soft serve with sea salt caramel, banana compote, and caramel chocolate notes
  • Duo Vanilla — a light and refreshing swirl celebrating simplicity
  • Affogato — espresso poured over creamy soft serve

Riverside Rhapsody Returns

As part of “101 Days of Summer,” the hotel will also present the fourth edition of Riverside Rhapsody on Friday, June 5, 2026.

Set within the tranquil Arrival Courtyard overlooking the river, the intimate one-night-only performance brings together Thai musicians from the College of Music, Mahidol University for an evening shaped by live music and the effortless spirit of summer by the water.

Limited to just 80 guests, the experience includes welcome cocktails and canapés, with guests invited to continue the evening across the hotel’s restaurants following the performance.

From 1 June 2026 – 31 May 2027, the contemporary exploration of Japanese sensibilities, expressed through the meticulous craftsmanship of French pâtisserie, will be served at the hotel’s exclusive 26th-floor Baan Borneo Club, usually reserved for hotel guests.

The savoury tier spans a series of bite‑sized delights: tuna wrapped in compressed cucumber and crowned with Ikura caviar, finished tableside with a chilled kombu consommé; a crisp oyster topped with lime shoyu and ebiko caviar, presented in a charcoal shell; and a konnyaku‑infused prawn wrapped in fine somen and dusted with premium matcha. Ocean’s bounty finds its savoury counterpoint in seared Wagyu glazed in an umami‑rich teriyaki miso, complemented by aosa nori and Ossetra caviar.

The sweet selection is where French pâtisserie truly shines. In the fragrant yuzu mousse, bright citrus meets the gentle bitterness of matcha. A buttery hazelnut financier is taken East with kombucha ginger cream, while another timeless French classic, the Mont Blanc, reveals satisfying layers of almond sponge, whole chestnut, raspberry compote and maple Chantilly. Premium nama chocolate infused with roasted hojicha delivers a smooth, melt‑in‑the‑mouth finish, and signature scones receive a seasonal update with Hokkaido milk and Sakura cranberry, served with clotted cream and house‑made melon and peach honey jams.

At La Familiare, the resort’s elegant ristorante, passionate chefs use premium Italian flour and San Marzano tomatoes, imported from Naples, to bring the traditional taste of Italy to diners. On May 8, 2026, the restaurant staged “Yeast & Hops” – an exclusive epicurean evening that unfolded over six sensational “Slices” – pizza & beer combos that blended timeless flavors with culinary creativity.
 
Slice #1 – Tonnato featured deep-fried dough wrapped into a cone and packed with tuna, ham, black olives, tonnato sauce and salsa verde, complemented with a glass of Menabrea Blonda, a light and crisp Italian lager. Slice #2 – Tricolore then presented a classic Neapolitan-style pizza with a light, airy Biga dough base, topped with roasted tomato sauce, parmesan fondue, basil pesto and spicy nduja to resemble the red, white and green stripes of the Italian flag. This was beautifully balanced with Poretti’s full-bodied 5 Luppoli Bock Chiara.
 
A striking black Schiacciata-style pizza, made using coconut & charcoal activated dough, was showcased in Slice #3 – Porchetta, Potate & Provola, layered with Italian ham, roasted potato, scamorza cheese, rosemary cream and rocket pesto to capture the taste of the Italian countryside, and paired with Sierra Nevada Pale Ale. Slice #4 – Detroit to Pattaya then treated diners to a deep-pan slice, bursting with Thai flavors and a Panang curry sauce, matched with a glass of Hoegaarden – a refreshing wheat beer.
 
Slice #5 – Sapori evoked the essence of an Italian forest, with a Roman-style wholewheat base topped with truffle fondue, mushroom ragu, grilled Angus beef and butternut squash purée, accompanied with Duvel 666 to balance the umami depth. This inspiring evening concluded with Slice #6 – Dough-Nut, an indulgent pizza donut filled with tiramisu cream and hazelnut praline, topped with gold dust and paired with a glass of Maisel’s Hefeweizen Dunkel, a dark wheat beer to complement the dessert’s sweetness.
