World Gourmet Festival Returns to Bangkok with a Star-Studded 2022 Edition

Bangkok’s most prominent and longest-running international culinary event, World Gourmet Festival returns to the City of Angels to gather award-winning Master Chefs under one roof for a weeklong celebration of outstanding food paired with superb wines in an environment that fosters free exchange of ideas.
 
Held from the 6th to 11th September 2022 at Anantara Siam Bangkok Hotel, the festival promises an extraordinary line-up of some of the world’s best chefs who will showcase their distinctive styles at one of the capital’s most exclusive addresses. Nine acclaimed chefs from the Netherlands, France, Italy, the United Kingdom and Thailand with four Michelin stars between them will present an international culinary extravaganza:
 
- Peter Gast: Graphite in Amsterdam, Netherlands (1 Michelin star)
- Davide Caranchini: Materia in Como, Italy (1 Michelin star)
- Nicolas Isnard: Auberge de la Charme in Prenois, France (1 Michelin star)

The proceedings will kick off with a glittering gala dinner on the 6th of September held at Anantara Siam’s ballroom giving guests a taste of what’s to come during the festival: exquisite starters from Sugio Yamaguchi and Peter Gast, mains from Nicolas Isnard and Davide Caranchini, dessert from Claire Clark and petit four from Anupong Nualchawee, Anantara Siam’s Executive Pastry Chef. The experience is open to the public and tickets are available for THB 8,500++ for a five-course meal including wine pairings.
 
During the festival, each chef will host between two to three exclusive dinners in the hotel’s award-winning Biscotti, Madison, Spice Market, Guilty and Shintaro restaurants, while English master pâtissier Claire Clark, rightfully considered one of the world’s best pastry chefs, and Bangkok’s own Sutakon Suwannachot of the MasterChef Thailand and Top Chef Thailand Dessert fame will be showcasing their refined confectionery in the Lobby Lounge throughout the week.
 
At Guilty restaurant, Anantara Siam’s brand-new dining and entertainment venue, celebrated chef Peter Gast will host three dinners on the 8th, 9th and 10th of September inviting food lovers to experience exquisite flavours that earned his speakeasy-style restaurant Graphite in Amsterdam a Michelin star. 
 
At Biscotti, Christian Martena of Bangkok’s Clara restaurant will be serving up a veritable Italian feast on the 7th and 8th of September, followed by two more nights of Italian extravaganza courtesy of Davide Caranchi named Best Italian Young Chef 2018 by L'Espresso restaurant guide and whose restaurant Materia made it into the ‘50 Best Discovery’ collection by the World’s 50 Best.

Chef Singh’s culinary journey began in 1999 when he started as an Assistant Cook, followed by an Indian Cook and Commis Chef at well-known hotels and resorts in New Delhi, India before moving to Thailand ten years later.

​The Launch of Midsummer Night’s Dream Bar’s First Act
On 22nd July 2022, Midsummer Night's Dream Bar launched its First Act consisting of 15 drinks inspired by the great playwright William Shakespeare and his famous comedy piece, A Midsummer Night's Dream,, which is a story about a love triangle. The cocktail's key ingredients are flowers because this cocktail bar is hidden inside a flower shop.
This cocktail bar has four stories. The first floor is the location of Wynnwood Florist. To hydrate, clients must climb the spiral stairs. The second floor is a cocktail bar where signature cocktails, classics and bespoke cocktails are made. This floor is designed for people to have good conversations and exchange views among drinkers and bartenders. On the third floor is a gin bar where gin lovers can indulge in more than 90 gin selections that the owners source themselves. The bartender at the gin bar will always help customers find the perfect tonics and garnishes that complement their chosen gins. The guests on the third floor can also enjoy the performance of the DJs and jazz band. The fourth floor is a private whisky vault where whisky lovers can taste exquisite and rare whiskies that the owners select, or customers can close this floor for a private party.
The owners of Midsummer Night's Dream Bar come from different backgrounds. Khun Peerapath Boonprasit, a real estate manager; Khun Nawinda Kaewdonhun, a flower artist; a radiologist, Doctor Pikool Chaijitwanitkul; an entrepreneur, Khun Setthapong Srisuphonvanij and an actress, Khun Pichapat Mahathityakul share a passion for quality cocktails.
 

The Act I signature menu was created under three cores. First, every drink must have a flower as a key ingredient. The team uses modern techniques such as sous vide, redistillation and making Saccharum. Second, every cocktail must tantalise the human five senses: appearance, aroma, sound, touch and taste. Third, all drinks must have three taste notes, just like perfume has three notes. Each cocktail must have Top Note – The first taste from the sip that comes with the aroma, Middle Note – the prominent flavour and the body of the drink, and Base Note - the body back or the taste that lingers.

The Act I of Midsummer Night's Dreams categorises drinks into four sections. The first section, or Scene I, is the first half of the play where four leading characters run into the magical forest because of their love square. One of the drinks in this section is Reflection of the Forest. It was inspired by the magical forest where the story mostly takes place. It is a fizzy drink consists of Osmenthus air as the drink’s top note, the body of chamomile is the middle note and the base note are the grape and mint flavour from the jelly at the bottom of the glass which gives this drink texture.

Scene II tells the story of the first half of A Midsummer NIght's Dream, where the conflict starts. Drop of Enchanted is the drink ins this section and was inspired by the love potion Oberon, the fairy king, puts on his queen, Titania, to fall in love with the first being she sees after waking. This sweet and sour drink consists of sakura as the top note, which comes in the form of bitters. The middle note is ume that was mixed with salted sakura balanced by the egg white. The base note consists of an ei-hire or dried stingray fin that comes in the form of vermouth and the smell of quince.

Scene III was inspired by the play's second half, where the story slowly comes to resolution. A drink such as Theseus Morning Hunt was inspired by the fair and sensitive Theseus meets the unconscious young lovers in the wood on his morning hunt. This one is an umami drink. The top note is the slight smell of bacon and spices and the fluffy texture of the mulled wine foam. The middle note is Niam leaf rum, which goes with the custard flavour and aroma. The base note is the tropical note from pineapple and pandan.

Scene IV is a section that pays homage to the play. It consists of a drink such as Midsummer Night's Dream. This drink is a reversal of New York Sour. Instead of being a whisky-based cocktail topped with wine, it is a cocktail based with wine and topped with whisky. The ingredients of this drink are Monkey Shoulder Whisky, the top layer of Fino Sherry-based cocktail with orange blossom quinine cordial, and Angostura Bitters. The drink's top note is the taste and aroma of the whisky on top and the orange blossom. The middle note is the combination of aromatic fino sherry and bitterness from quinine. The base note is the mixture of floral notes and earthy roots when the drink layers are combined inside the mouth.
 
Act I consists of 15 signature cocktails which Midsummer Night's Dream Bar serves the drinks from 6 pm until close.

Discover the ‘Stories of Morocco’, a flavourful culinary journey of classic dishes from various regions of Morocco. Executive Chef Carlo Valenziano has redesigned the classics to evoke gastronomic memories, with bracing flavours of each Moroccan city. Chef Carlo’s inspiration comes from his exciting journey within the country, tasting popular dishes and meeting with many local chefs and culinary experts. There is so much to discover in the stories behind this fantastic cuisine.
 
The journey begins with amusing appetisers, featuring ‘Shakshuka egg’ – spiced tomato and bell pepper stew, soft egg, merguez and fresh herbs, served with Arabic bread; ‘Harira soup’, traditional chickpea, lentil and tomato soup, fresh coriander and lemon; and the famous ‘Pastilla’ – filo pastry stuffed with spiced chicken, almonds, cinnamon and sugar dust, shaped uniquely like a roll for sharing and served with harissa, which cannot be missed.

QUINCE EATERY is a staple in the Bangkok dining scene.

Nestled in the greenery of Chitlom, Quince’s Mediterranean-inspired menu speaks to thoughtful modern dining. It takes advantage of the plethora of seasonal and international produce available with exciting flavourful dishes focused on woodfire ovens and grills.
 
When Quince opened in 2012 it was one of a few restaurants setting the standards for farm-to-table dining, championing not only local seasonal produce but European and South East Asian seasonal produce. Quince brought in the best seafood from around Asia, and supported the budding local Thai fig-growing farms. Quince was one of the first restaurants to purchase Asian-made burrata from Asia's first producers in Vietnam. Quince was also one of the first restaurants to name and pay homage to where its produce came from and the name of the farms, in hope that others would support local.

Quince looks toward the future and setting new thoughtful standards in modern dining with Chef Steve Doucakis and GM Greg Plowes.
 
Chef Steve Doucakis spent many years honing his skills at Jean George’s two Michelin star restaurant in New York, then at Isa in New York, his travels took him to Taiwan and Bangkok’s acclaimed Michelin star Bunker, before arriving at Quince. This year Quince has risen in ranks on Asia’s Best to 91st place from its previous 97th place. It has won a Michelin star plate and continues to receive accolades. Exquisitely Prepared, Sustainably Sourced
Hand-crafted in the kitchen of The Peninsula Bangkok’s acclaimed Mei Jiang restaurant, each mooncake is made using organically grown and sustainably harvested ingredients – including rich, creamy organic milk and butter; organic eggs from free-range hens; and organic flour. The resulting custard-filled mooncakes, imprinted with traditional designs, are beautifully packaged in elegant, eight-piece octagonal red gift boxes made with fully compostable, environmentally - friendly materials and decorated with a lotus-flower motif. The eight-piece sets are a take on the Chinese word for “eight,” which sounds similar to the words for “prosperity” and “good fortune” – popular good wishes exchanged between family members, friends, and colleagues.
