Bull & Bear, located at Waldorf Astoria Bangkok on level 55, is excited to introduce its revamped à la carte menu that was curated and refined by Chef de Cuisine Hathairat Urapanthamat, aka Jeiw.

They may rest assured that Bull & Bear continues to offer an exceptional selection of grilled meats that showcases only the finest cuts such as a Dry-Aged Western Australian Lamb Rack, Kagoshima Wagyu Tenderloin A5, Wagyu Ribeye MBS9, and 1kg Porterhouse Steak.

When asked about the revamped menu, Chef Jeiw smiled broadly and replied, “I love all the dishes! I am proud of our newer dishes, such as the Charred Kale Salad with Eggplant, Salsa Verde and Black Garlic Tahini. Kale’s highly nutritious but does not appeal to everyone’s palate. So I employ a grilling technique that gives it an aromatic profile similar to that of a steak and have created a sauce inspired from East Asian cuisines to add a distinctive spiciness. I hope to change many peoples’ minds about kale with this dish!”
Chef Jeiw shared another dish that is close to her heart – Charred BBQ Octopus with Popcorn Chili Butter, Sautéed White Corn, and Jalapeno, Arugula Romesco Sauce. This was inspired by her fond childhood memories of nighttime temple festivals; the excitement in the air and her joy when sampling wide varieties of foods from the stalls. Chef Jeiw has recreated the captivating aromas of grilled squid and caramel popcorn in a dish that is also delectable, refined and contemporary.

A British national, Daniel has enjoyed a far reaching international career in the hospitality industry, including senior leadership roles with major companies in a wide spectrum of sectors and countries. Over the last 24 years, he has led the opening of properties all across Asia Pacific, including Starbucks Reserve Dewata in Bali, the world’s first Starbucks concept store and the largest Starbucks Reserve in the Asia Pacific.
Ever since he entered the hospitality industry in 1998, Daniel’s career has been on an upward trajectory. Having gained experience with Hyatt in Australia and Langham Hotels International in Hong Kong, Daniel has taken several progressive career steps that expanded the depth of his knowledge. Rather than remaining solely in the hotel sector, he has held directorial roles with Regus (now IWG plc), the serviced office giant, where he was responsible for business centres in over 140 locations across 16 countries, and Ovolo Hotels Group, where as Group Director of Operations he oversaw a portfolio of eight hotel properties and two serviced apartments.
 
Having moved to Sanctuary Retreats in Myanmar, he successfully launched an ultra-luxury river cruise ship and laid the foundations for the company’s future expansion. This paved the way for Daniel to join Scenic Luxury Cruises & Tours as Group General Manager with global responsibility for four reservation centres and 200 agents on three continents. He then successfully led the 99-suite U Paasha Seminyak, before being appointed by Starbucks, the global coffee giant, as General Manager for Indonesia, which included the launch of Starbucks Reserve Dewata in Bali.

Sindhorn Midtown Hotel Bangkok, Vignette Collection’s Executive Sous Chef – Chef Phukvarun Watchmon (Chef Golf) introduces the Thai royal snack set this coming month at the hotel’s retro-Thai restaurant, Bangkok’78.
 
 The Thai Vijitr, royal snack set consist of a welcome drink and a refreshing traditional starter – watermelon sprinkled with seasoned dried fish, followed by five pairs of handcrafted bites such as deep-fried prawns with plum dipping sauce, steamed dumplings with cod fish filling, and flower-shaped dumplings. Two pairing cocktails will be served throughout the courses. Royal dessert with a modern twist – Somchoon Hima or citrus granita is served at the end of the culinary journey. Chef Golf will be leading the professional kitchen team in preparing each dish behind the counter of the live kitchen and presenting to guests, telling the stories and inspirations behind each of her creations.
 
Chef Golf had started her passion for cooking from a young age, when she helped her mother at the family restaurant. Observing and learning tips and tricks and developed the love for Thai food since then. After graduation, she started her journey as a chef at the royal kitchen of Klai Kang Won palace in Huahin, Thailand. Post this, she had been working in luxury hotels in Bangkok for over 16 years, specializing in Thai cuisine. Presently, she leads the kitchen team of Sindhorn Midtown Hotel Bangkok, Vignette Collection at the retro-Thai restaurant – Bangkok’78, the café & kitchen – Sip & Co., the pool bar with a view – Horizon Pool Bar, the Thai whiskey bar – The Black Cat, and also for the hotel’s in-room dining program. She had recently participated in Top Chef Thailand 2023 and made the top 10 finalists of the reality TV program.
 
Top Chef is a reality competition television series originated in the United States. The show features aspiring chefs competing against each other in various culinary challenges and judged by professional chefs from the industry. This year’s show is the 4th season featuring 16 chefs competing for the “Top Chef Thailand 2023” title.
 
The Thai Vijitr royal snack set will be prepared live and served at the hotel’s all-day-dining, retro-Thai restaurant, Bangkok’78 at THB1,978 net per person. Reservations are now open for 9, 11, and 13 May 2023 from 6:30 pm onwards with limited seatings.

Standard Sounds, The Standard’s music talent-scouting arm, is bringing its latest discovery – Thai reggae band “Roots Tone” – to The Standard, Hua Hin on 20 May 2023. This second Standard Sounds session this year promises multicultural tunes, drinks and bites from our Lido Bar, all served in an intimate setting against a backdrop of Hua Hin’s pristine beach.
 
Formed in Bangkok in 2010, Roots Tone brings together diverse musicians from different ethnicities and backgrounds who jointly compose original scores and lyrics that combine the band’s early rocksteady sound with later excursions into Reggae Dub. Their latest song, “Reflection Trip”, offers musings on the fleeting nature of life and the uncertainty of the future, while encouraging the listener to accept and understand the impermanence of things.
