New Hong Kong chef brings authentic dishes and oodles of creativity to this longstanding favourite at Novotel Bangkok on Siam Square FOR pundits of traditional Chinese cuisine, Lok Wah Hin Chinese restaurant of Novotel Bangkok on Siam Square offers more than 300 time-honored selections from Shanghai, Canton and Szechuan in an atmosphere inspired by a traditional Chinese village. Cross the Chinese arched bridge and cobblestone floor into the main dining room and your senses are immediately transported to an ancient Chinese courtyard – one that’s redolent with the aromas of Chinese cuisine. The harmony of space and light is enhanced by overhead red lanterns, bird cages, floor to ceiling windows, and lighting that comes from shrouded windows under the eaves of Chinese dwellings, where heavy timber and iron doors open into six private dining rooms. |
Dishes are prepared by the restaurant’s new chef, Leung, a Hong Kong native who uses his skill to create traditional provincial Chinese dishes as well as a selection of contemporary highlights that reflect today’s tastes and changing trends. With more than 30 years’ experience in Chinese restaurants and luxury hotels throughout Hong Kong, Sri Lanka and Thailand, Chef Leung brings with him an impressive repertoire of both traditional and contemporary Chinese dishes and signature highlights from both China and Hong Kong. |
Along with the a la carte menu, Chef Leung whips up a batch of more than 60 dim sums, many of which highlight his own personal interpretation of this traditional Chinese favourite. You can enjoy these a la carte or opt for the All-you-can-eat dim sum lunch (B620++), which includes soup, a choice of fried rice or noodles, and dessert. Chef Leung’s Dim Sum recommendations include Steamed prawn dumpling, Steamed fish and ginger wonton, Fresh prawn “Har Gou’, Salted egg yolk sweet custard bun, and Chinese rice noodle stuffed with Chinese dough.
Chef Leung’s signature highlight at Lok Wah Hin is his rendition of the traditional Peking BBQ Duck, with its succulent meat accompanied by crispy marinated skin and traditional condiments.
